In the Kitchen: Classic Minestrone Soup from Magnolia Table Volume 2

It’s been almost a year since I’ve done a true In the Kitchen post. I am disappointed how little I cooked last year or just didn’t really document it here. But this Christmas I received 3, yes 3, new cookbooks including Magnolia Table Volume 2. I cooked a few things from Volume 1 for my family over the past few years so I was excited to get the new one and try it out. For my final kick in the butt to cook something new I asked my Instagram followers and in true me fashion, I made 3 things instead of one.

Since it was New Year’s Eve and freezing cold by Arizona standards I chose the Classic Minestrone Soup. Joanna’s recipe calls for a medium yellow squash which my local store didn’t have any of so I skipped it. That is the only alteration I made other than skipping the fresh basil at the end. What I love about the recipes in these cookbooks is how comforting many of them are. I wanted to eat a bowl full after a bowl full. It cooked really well and fairly quickly.

Verdict: All in all I really enjoyed this soup and it was comforting for my cold night in. I would 100% make this again.
