What I Ate This Month

April was a little bit of a struggle when it came to eating right, I won’t even lie. With so much going on half the time I didn’t even care about eating or meal prepping in advance. But I’m glad I stuck it out and powered through because I got to enjoy some really delicious stuff this month. If you know me, you know I love a good salad and I’m still thinking about the granny smith apple “salad” component. It was just the right amount of crunch and flavor. Trust me, I could have eaten that salad every day. It was light and refreshing - perfect for how hot it’s been lately. The most exciting thing I ate this month had to be the cookie butter parfait. Yes, of course. If I can put cookie butter in something, I will. I’ve made a lot of parfaits lately (quick and simple breakfasts - especially on busy mornings), and I must admit this one is in the lead for my favorite!
