My daily hustle and bustle has seemed to get a little more chaotic lately. I might not be the only one who thinks that. But because of this constant go, go, go attitude, I often find myself searching for a really good balance between convenience and nutrition. I mean, most days I barely remember eating a full lunch. That's where the magic of quick weeknight meals and especially vegetable-heavy recipes comes into play. I got Molly Baz’s cookbook More is More a couple of weeks ago and I’m obsessed with it. There are so many recipes that sound way too good to pass up. I tried this salad for a quick dinner and was pleasantly surprised. The Vegan ranch is so creamy and delicious. The cauliflower was just right and super filling. I ended up eating the leftovers for the next few days with nearly every meal.

PS: If tofu isn’t you’re thing, try plain greek yogurt. It was just as delicious.

Stuffed Pepper Soup

Stuffed peppers are legit one of my favorite meals to cook. When I didn’t have enough time to cook them, I saw this and knew it would be super delicious. I was right. It’s hearty and will be perfect going into the colder months of the year. Plus, it’s a one-pan wonder which I can always get behind during a busy week.

Lately, I’ve been making a whole lot of one-pot wonders and I’m thankful The Modern Proper has so many yummy ones to choose from. This one was super quick and easy. It was filling and had all the right veggies.

Grilled Chicken Bowl with Corn and Zucchini Salad

I’ll be honest, the best part about this bowl was the corn and zucchini salad which I have made repeatedly to add to my other salads throughout the week. I really enjoyed how light but hearty this meal was. I used a lot of ready-to-go ingredients - like pre-grilled chicken breasts from the grocery store's quick meals section - which made it come together even quicker.

Sheet Pan Italian Sausage Heros with Honey Mustard

I love a good sausage and peppers sandwich. I miss my dad all the time. But this is definitely one of my favorite entertaining throw-together meals. I really liked the combination of the honey mustard which I had never used before with these types of sandwiches. The leftovers were even great the next day chopped up into a bowl - sans bread of course!

Vegetarian Enchilada Skillet

I’ve been on a quest to cut down my meat intake and really ramp up my veggies instead. I loved the combination of zucchini and squash in this skillet. Two ingredients I rarely get to use these these days but absolutely love. A good reminder to use them more! It’s a super awesome Meatless Monday switch out and was way less time than making enchiladas.

Chicken Tzatziki Bowls

I love a good bowl meal and these are no exception. They combine my favorite things all in one place, especially Tzatiki. I kept all the ingredients separate so that I could use them throughout the week to make more bowls or use the ingredients. Okay fine, I mean the Tzatiki.
