In the Kitchen: My Current Favorite "Breakfast Salad"
A few weeks ago I ordered Salad Freak on a whim when I wanted to get some inspiration to change up my daily salad game. What I love most about the book is how it is broken down by season and features really yummy seasonal produce. While flipping through I saw two fruit-based salads one specifically being a “breakfast” salad. I am not much of a breakfast person, but these fruit salads looked pretty delicious and feasible to put together, especially on work days. While at the farmers market I set out to get some produce that I personally enjoy ensuring I keep up with healthy eating.
This one is a take on Jess’ breakfast salad with spicy granola without having to make my own spicy granola (something I would love to make with more time). Honestly, there isn’t much of a recipe for my version and that is what makes it incredibly easy - and delicious. You can probably substitute any seasonal or produce you love not to mention change up the flavors of yogurt and granola. A real choose your own adventure as far as I see it. Here is how I made mine which I’ve been eating pretty much every other day. It’s simple, yummy, and a really great summer meal.
Ingredients:
2 mandarin oranges (I like the baby ones with no seeds for easier peeling and eating)
1/2 a pink grapefruit
A couple of strawberries
Madagascar vanilla and cinnamon greek yogurt (this one is my favorite)
Red chili flake for sprinkling on top
