Recipe Roundup: Scrumptious Summer Salads

If there is one thing I eat on a regular basis it’s a salad. People have always poked fun at me for loving my “rabbit” food and enjoying the same variation of salad for weeks on end. While some may find that absurd or even boring, I just truly love salads. Especially at lunch because I don’t feel like I want to take a midday nap after finishing a meal. Salads are healthy and give me the nutrients and energy I need to get through the day. They keep my body on track and when done right they are just downright delicious. That said, even I get bored of having the same old salad sometimes and it doesn’t matter how many different toppings I toss on lettuce, they can be a bore.

Luckily, the fun thing about salads is the endless amount of options out there. Summer is a really abundant time for many fruits and veggies. Sometimes when you don’t have an idea of how to use the wonders of seasonal produce, a salad can seriously cut the mustard. For the past few weeks, I’ve been enjoying a typical house salad with tomatoes, red onion, pepperoncini, and goat cheese with a vinaigrette dressing. But I think it’s time to switch it up. Thankfully, there are plenty of awesome food bloggers and foodies out there to help me with a new burst of inspiration.
