In the Kitchen: Chrissy Teigen's Lemony Arugula Spaghetti Cacio E Pepe

Chrissy Teigen's Cravings cookbook is probably my favorite cookbook. So it's not really surprising how excited I am for its follow up. But since that doesn't come out for a little while I have plenty of time to keep cooking my way through the OG cookbook. And there is one recipe that keeps popping up in my Twitter feed. I feel like Chrissy has literally favorited every single tweet featuring her Cacio E Pepe. I am pretty hesitant to try new pasta dishes. Being Italian, I have a pretty hefty collection of pasta recipes, but since this seemed like one of her most well-loved, popular recipes, I thought why not give it a shot. I took one lazy Saturday night, turned on some Lifetime, grabbed some rosé and got to cooking.

I must say I can see why it's one of her most popular if not THE most popular dish in this book. It's delicious and has just the right amount of spice. It was satisfying and had the right amount of tart from the lemon juice. That said, I guarantee I left my pancetta, garlic, and seasoning mixture in the pan too long waiting to mix it with the noodles, so it took more spice than I expected it to. I definitely would make it again...maybe a couple thousand more times. Luckily this time I had made some ricotta and roasted tomato bruschetta to go along with it which toned down some of the spice. Although why not just make some because why not?
