Recipe Roundup: Holy Tomatoes
This recipe round-up is all about tomatoes. When I was a kid I was obsessed with tomatoes. They were sure to give me a bowl of tomato slices with a little salt for every meal. Now as an adult I can be a little iffier on them. One day I love them and the next I’m just kind of over them for a while. Somehow one of those I love tomatoes days happened to me recently at the farmers market and now I have a surplus of tomatoes I have no clue what to do with. Sure, I love cherry tomatoes in my daily salad, but I didn’t just end up with cherry tomatoes. I also have a bin of vine-ripened tomatoes just waiting to be used. So far I’ve made an incredible sauce with fresh tomatoes and sausage. I also made a delicious roasted tomato toast after seeing them all over Instagram.
So I went in search of yummy ways to enjoy my tomato blessings. Luckily there was no shortage of ways to enjoy this seasonal treat.
