In the Kitchen: Piña Colada Ice Pops
If you like piña coladas, then these ice pops might be for you. I don't really know how the obsession my friends have with piña coladas began. But last summer it seemed to completely take over. It could have been a conversation about Yacht Rock or the day we spent poolside trying about 6 recipes until we got the right one. But I truly believe it was the chill weekend we stayed at the vintage hotel which, naturally, serves vintage cocktails.
Of course, Escape (The Piña Colada Song) is somewhat of a summer staple especially when I'm having a Yacht Rock moment. Although I have many questions about the story in the song beginning with how could this couple possibly been together "so long" and they never knew the other liked piña coladas? I mean that NEVER came up? Not once?
But I digress. Ice pops are a summer essential so I figured why not combine the two for a special treat? I believe I mentioned these way back in July in one post or another. I have never made a piña colada and, truth be told, I rarely use my blender period. I figured how hard could it possibly be? I turned on the Beach Boys and got to work.
How Did It Go?
Making the piña colada mixture wasn't difficult at all except for the coconut milk. Whatever can I got really didn't have tons of solids? I'm not sure if the heat messed with it or I am just really lacking knowledge on this. The recipe could have used more pineapple as well. When I added the cherries to my molds they immediately sank to the bottom. I have a feeling this was due to the consistency of my mixture likely due to the coconut milk issue. They looked nothing like the photos either (granted I'm not a food stylist).
Did they taste like a refreshing piña colada? According to each of my friends, yes. In fact, they loved them. Personally, I'm not a huge piña fan. It's something about the texture and the sugar content. I thought these ice pops would change my mind, but they really didn't. The ice pops were soft even though they were in the freezer for most of the day. I just found the texture to be off-putting. I was also afraid of them melting and falling apart before anyone could enjoy them. I had to eat mine over the sink. The cherries, if anything, were my favorite part. They also weren't pleasing to look at which made me a little upset.
Would I Make Them Again? For myself, no but for my piña colada loving friends, of course, I would.
