In the Kitchen: Magnolia Table's Guacamole
I guess you could say Memorial Day weekend was all about guacamole wars. I'm not exactly sure how or why that happened. I mean I have my tried and true go-to recipe any time I need to contribute guacamole to anything. I make it so much I have it memorized. Rather than sticking with that, I ended up beginning the weekend with Beyoncé's recipe and ending the weekend with this one from Joanna Gaines. I guess you could say having guacamole, rosé and watching the premiere of the Bachelorette has become quite the summer tradition. So what better time to try this? I had seen the Magnolia Table cookbook a few times while browsing at Target. You know, when I stop to peruse the Hearth & Hand section looking for anything my apartment might desperately need. While flipping thru I spotted this guac recipe and knew I had to try it.
I wouldn't say I'm a huge Magnolia/Fixer Upper/etc fan. I won't be running off to the Silos any time soon. But I do watch it occasionally (hey, I mean it was playing on the television the day I got my wisdom teeth out) and I think their eye for design is quite interesting. There is a huge following for it and I think that's pretty cool too. And well, this happened too:
The Results: I love this guacamole. I think it might be my new go-to. It was super refreshing and we quickly ate all of it. I wouldn't be surprised if this is all I eat during the summer. It wasn't too spicy and I really liked that she suggested adding as little or as much jalapeno and onion as one wanted. I ended up using half a red onion because I felt like tablespoons was a strange measurement. I wish I had made the salsa as she suggested. (This guacamole is 1/2 of an appetizer recipe from the cookbook) Maybe next time!
I made this again this past weekend and added pomegranate seeds. A local Mexican food restaurant adds pom seeds to their guac. I like the sweetness and texture that it adds. I thought this would be the perfect recipe to try it out on at home! It was.
