In the Kitchen: My Basic AF Cucumber Salad

I'll say right up front. I'm not a food blogger. I envy their ability to create delicious recipes and take perfectly shot images of their final creations. That said, I do like to play around in my kitchen whether it's creating meals I find delicious or trying out recipes I come across. Many years ago my friends were obsessed with sushi. Every time we wanted to go out to eat, sushi was always the dish of choice. Okay, so maybe that slightly had to do with the fish bowl sized cocktail 6 people could share. I couldn't stand fish so I always found myself eating cucumber salad instead.

There was just something refreshing and light about thinly sliced cucumbers and whatever dressing they used. I eventually gave up my aversion to fish and began enjoying sushi, but cucumber salad remained one of my favorite light snacks. This recipe for cucumber salad isn't your usual Asian influenced cucumber salad. I'm sure there are many delicious recipes out there for that, but mine is just a simple snack. I eat this constantly. It's an inexpensive, light treat.

I don't use real soy sauce but rather liquid aminos. Liquid aminos is a soy sauce alternative with zero calories. It has an umami flavor and has a lighter salt content than soy sauce (but still tastes the same). It contains the necessary amino acids the body needs. Liquid aminos also don't contain wheat making it useful for gluten intolerances.

Right now I'm heavily addicted to Trader Joe's Everything But the Bagel sesame seasoning and put it on nearly everything. If that's not your jam, just add some regular sesame seeds. If you're looking for a more Asian influenced salad, try tossing in some ginger, rice vinegar, or red onions.

My Basic AF Cucumber Salad

1/2 a regular or English cucumber 1 tbsp liquid amino (or less depending on individual taste) Everything But the Bagel seasoning or regular sesame seeds

Peel and chop cucumber into small pieces. Add liquid aminos and sesame seeds (or seasoning) to taste. Mix and enjoy cold.
